Penne tossed in our Genovese Napolitana Sauce! This ragu is very traditional in the Campania region (think Naples) and is rarely found anywhere else. Super traditional but also quite hard to find. This dish is the perfect comfort food for this fall weather. Beef and pork braised for about 6 hours with a TON of onions (2 to 1 ratio) until the onions break down and release all their moisture. We then simmer for a couple more hours to reduce the liquid while adding some white wine for depth. It's not the usual ragu or bolognese that you're used to, NO tomatoes!!! Topped with freshly grated Parmesan for some salty goodness to balance the sweetness of the onions this pasta is truly a flavour 💣!!!!
